i saw that a few years back... i almost think that Joey Chitwood did the stunt.. but i could be wrong..

they also made a Matador fly in that movie...custom made detachable wing prop unit...very james bondish
Chitwood sounds like a good guess to me, that's about the time they were hugely popular. I'll plug the movie in later & see what the credits say...or someone could possibly wiki the movie...
